Long Overdue

Hello all! Apologies for the lack of posting the past few months. Motherhood is treating me well, however, it has put posting on the bottom of the to-do list. It has also put exploring new recipes near the same level, though I'm finally starting to get back into a grove with cooking.

A quick children update: Owen is doing great! His English is really coming along and his Lingala is completely gone (which is crazy to me). He LOVES swimming, riding his bike, playing with cars, and most recently being Superman :) And yes, the ENTIRE outfit was his idea, I just did as I was instructed!


We are still waiting on Gibson's visa approval before we'll be able to bring him home. Please pray that this time around it would go quickly and smoothly!

Now for the cooking. Bobby's sister Cathy joined us for dinner last night and I made Grilled Steak Fajitas in effort to continue to chip away at our freezer full of beef. They were yummy and made a refreshing summer meal.

1 beef steak (I used sirloin)
3 T +/- steak sauce
8 flour tortillas
1 c rinsed canned black beans
1 c frozen corn, thawed
1 tomato, chopped
1/4 c onion, chopped
1/4 c Italian dressing
2 T fresh cilantro, chopped
2 T lime juice
2 cloves garlic, minced
1 t cumin

Grill steak over med-high heat, 4-5 min on each side. Brush with steak sauce during last min of grilling.
Warm tortillas on grill or in microwave. 
Combine remaining ingredients.
Cut meat across the grain into thin slices and serve with tortillas and bean mixture.
