Adoption Prep and trip to Iowa City
As we try and get ready for the arrival of our children, we are preparing our house, our hearts, and our minds (with adoption/parenting education :) for the changes that will come. Right now we're working on a little essay about the country we're adopting from and learning a lot about the history, including the horrible injustice that surrounds our children. I am so thankful for the organization we're working with, knowing that our boys are being well cared for despite their surroundings. Thanking God for each person who has had and will have a hand in getting those boys home.
Recently, we have been blessed by many friends with clothes, furniture, toys, books, etc. for our kids. I can't imagine going through this adoption process without the love, support, and generosity from so many. I am in awe of what a blessing our friends and family are to us. THANK YOU!!!
Speaking of friends and family, Bobby and I went to Iowa City last weekend to see our friends the Arant's and get together with my family. It was very fun to catch up with friends and hear some of the amazing things God is doing at Veritas Church. He is so good!
Our contribution to my family's tailgate at the Iowa Hawkeye Homecoming game was oatmeal chocolate chip bars. They're pretty tasty :)
1/2 c butter (softened)
1/2 c unsweetened applesauce
1 1/2 c brown sugar
2 eggs
2 T maple syrup or molasses
2 t vanilla
3 c oats
1 c flour
1 t baking soda
3/4 t salt
2 c chocolate chips
Cream butter and sugar. Add applesauce. Beat in eggs, one at a time. Beat in syrup and vanilla.
In separate bowl combine all remaining ingredients except chocolate chips. Add to butter/sugar mixture gradually. Last, stir in chocolate chips.
Spread into greased 9 x 13 pan and bake 28-32 min at 350.
